When I go to the gallery and choose weather.. the settings says there's no internet connection. I can not get the weather units to change.

I'd recommend logging out/logging back to the Fitbit app and try again to change the Temperature Units by following these steps:
To change the units used for the temperature in the Weather app:
Also, keep in mind that if the weather doesn't update, check the following settings:
If you change locations, sync your device to see your new location in the Weather app.
