How can I add friends using the email of their existing account? Without them resigningup

You can absolutely add friends without having to connect your Facebook to your Fitbit account. You can just go to the friends tile and then look them using the email address linked to their account. Once they receive the invitation, they have to accept it and then you will be friends on Fitbit.
