Can my Fitbit Flex track my sleep when my phone is on airplane mode? When my phone gets put on airplane mode, Bluetooth connectivity is switched off.

Yes, your Flex can track sleep without being connected to your phone. It only needs to have a bluetooth connection in order to sync the data to the servers and dashboard.

Mine is in airplane mode while I sleep. Then when I connect it in the morning, it tells me that it has no  data.
