Just wondering if Fitbit takes those heart rates and uses them to help more accurately calculate how many calories are burned... any idea?

Pretty sure it doesn't.
However, I use Digit & Polar H7 hear rate monitor for any actual exercise.
This calculates the calories (as well as much more detailed info) and sends it to FitBit .

Yes it does.
Get the iBiker app. It's the exact same app as Digifit, simply with a different name. and iBiker has been updated for Health app.
You log in using yoru Digifit account and it sync all your info as Digifit app. I have both and have conferred with Digifit on this.
FYI: The link posted by Dominique is 2 weeks old when nothing worked with Health app because Apple had issues.
