Fitbit Flex Step Count Off?

When I first got my flex, I wear it on my left hand. I type all day pretty much for a living and move papers etc, desk work. Now I noticed when I was sitting there I was getting hundreds of extra steps. So I tried changing the settings to Dominant vs Non-, now I'm still getting extra steps, except not as many... So you figure if I do 10k steps a day, what if its really only like 7-8k? Any suggestions

I don't know about that but I have noticed that when I shake something if I don't check sometimes it puts fitbit flex into sleep.  Not good if you notice a couple hours later. Has this happened to anyone else?

No personal experience with the Flex, but I think you should be able to delete the "fake sleep" afterwards, via your Dashboard. It's some hassle, but not the end of the world.

If you think "fake activity" may amount to 2-3k steps in average, just set your daily goal to 2-3k higher.

But first, you may want to assess the real extent of the "fake activity". As you are in your typical desk work with typing, moving papers etc., make a note of your current step count. Then check again your step count half-an-hour later (or whatever time you spend seated at your desk without moving from it). Extrapolate from that the total extra steps you're going to get for the entire workday.
