I have a Fitbit charge 3.. I’d like to get an analysis on a certain time slot of my day that has passed.. For example; I wanna see what my data recorded in terms of calories burnt, steps, bpm etc. From 5pm-7pm last Tuesday.. without having to manually add each category using the 15min breakdowns that are there by default when check calories or steps charts of the past.. how can something like that be done?

I think you can do this via the web interface at https://www.fitbit.com/activities
If you scroll down you will see an option for "activity record" below an icon of a stopwatch. Select this and you can specify a time period. The activity record will be listed in your activity history and has data just for that time period.
