I have a VR boxing game that I am going to start using as an exercise tool. It's not very convenient to have to remove the headpiece to check my fitbit. Is there a feature that will have it vibrate when I hit 500 calories in a single workout?

The Blaze Manual as stated in your Title can be found here
It talks about heart rate zones starting on Page 13. So check it out and see if it will do what you are asking

Depends on which Fitbit model you have.
ETA: Sorry, I missed Blaze in title - was just reading message.
I don't think you can on the Blaze. On some newer models, on the device you can set a workout target for calories or other parameters.
