I am attaching scanned pages from the latest Skating magazine which talks about nutrition and exercise. I attended a seminar by Dr Bernardot in Atlanta a few years ago. He worked with the USOC and studied the nutrition habits of the athletes and correlated with body fat content, endurance and overall fitness. The main result of the study was a recommendation that the athletes should balance the calories in and out during the day in real time. He suggested a plus or minus 300-500 calorie range. That produced the best overall fitness and body fat (long distance runners were good at this and had body fat in the teens, while gymnasts tended to fast all day long and then try to catch up in the evening - their body fat was in the high 20s to 30s).
