How do you read the step activity chart, does each colored line indicate the amount of steps within a five minute interval and why are the lines red, yellow, or green

That's right, it measures your steps for an interval of time (I think it might be 15 minutes). The color coding is your activity level during that time: red = lightly active, orange = fairly active, and green = very active.

Yes each line is for a 5min period. As for the colors - here is a screen shot of my lazy day and on the dashboard it shows what the colors (the distinguish the intensity levels) are for:
