Advise for vegan potluck dish

I am going to a potluck on Saturday and another one in two weeks and I am the only vegan. Although I love my food I'm afraid not everyone does. It is snowing and cold here. I'd like to bring some kind of casserole or main dish type food because these older ladies usually have the salads and desserts covered. 

I'm also trying not to add vegan cheese or meat subs because I feel like they are ok for us but non vegans tend to turn up their noses at them. 

any ideas would be greatly appreciated!  Thank you in advance

Would a soup or a stew be do-able? I don't have a recipe in particular, but there are plenty of vegan black bean stews, vegetable soups and the like. Plus it's easy to make a lot of!

I’m not vegan, but I certainly wouldn’t turn my nose up to good tasting food.  I googled vegan Mac and cheese and came up with a few interesting hits that rely on bean sauces of some sort.  Here is one I’ll probably make now that I’ve found it:  https://theyummyplant.com/home/ultimate-creamy-pasta-with-white-bean-puree/

 

A great cookbook you might like is the new (a couple years old) version of Mark Bittman’s “How to Cook Everything Vegetarian”

It has vegan versions of most recipes, and his approach is less “meat substitute” and more coming up with vegan (or vegetarian) recipes that stand on their own.

 

A non-casserole idea would be finger food of some sort.  Maybe a bunch of falafel bites?

How about chili? You could make one with just beans or with beans and tempeh, a Indonesian food made of fermented soy.

Great idea, Danielle!  I second chili, especially since it is about 10 degrees here now.

Spicy Lentil Stew! (basically chili, but made with lentils) Serve with diced avocado, green onions, hot sauce, and lime wedges.

 

Black bean soup! Serve with diced avocado, green onion, hot sauce, lime wedges, vegan cornbread, tortilla chips

 

Vegetable curry! There are so many awesome recipes, but something with chickpeas in a coconut-tomato sauce over brown rice would be amazing.

 

Ikea's vegan meatballs in a (cashew-based) vegan cream sauce over mashed potatoes!

 

(I'm not vegan, I just have a lot of friends who are and enjoy cooking for them).
