Any thoughts on quick (fast to prepare) and easy, yummy recipes for salmon or chicken?

Whisk together some coconut oil, tamari, lime juice, garlic, and brown sugar for a great salmon or chicken marinade. Toss everything in a large ziplock Baggie and place in the fridge for about 30 minutes, then grill. Easy and sooo yummy!

My favorite recipe is Chicken Taco Soup (on allrecipies.com). So easy and so good. 

 

Ingredients Edit and Save
Original recipe makes 8 Servings
  • 1 onion, chopped

  • 1 (16 ounce) can chili beans

  • 1 (15 ounce) can black beans

  • 1 (15 ounce) can whole kernel corn, drained

  • 1 (8 ounce) can tomato sauce

  • 1 (12 fluid ounce) can or bottle beer

  • 2 (10 ounce) cans diced tomatoes with green chilies, undrained

  • 1 (1.25 ounce) package taco seasoning

  • 3 whole skinless, boneless chicken breasts

  • shredded Cheddar cheese(optional)

  • sour cream (optional)

  • crushed tortilla chips(optional)

  
Directions
  1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
  2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

I was always trying to think of easy recipes to make when I came home from work and I can promise you that getting a crock pot will be your best friend ever. 

 

It's literally...pick a sauce/liquid...add chicken/meat/fish...put on low for 8 hours...come home and voila!

Some of my favorite are putting pork with tomatillo salsa and a can of diced tomatos/green chiles and putting it on tortillas for tacos!

Salmon- 

1. Herbed butter salmon with choice of side veggie

2. Grilled salmon  

3. Smoked salmon ( if you have a smoker)

 

Chicken -

1. Shredded chicken ( crock pot)

2. Crunchy chicken ( covered in frenchs onions) - Bake tenderlins 20 mins at 400

3. Parmesan chicken - same as above, just covered in parm and italian seasoning

4. Dill Mustard Chicken - cover in sauce of  plain yogurt, or greek -- add spicy mustard and dill - bake same as above

 

Just a few ideas.... 

Goals: Low Carb, high fat, 70-20-10 .... lose 20 pounds by 6/2017

Cooking chicken breasts in a Crock Pot breaks down both the flavor and the nutrients. The texture ends up being like strands of straw or leather. 

 

What I'll do when chicken breasts are on sale is buy large package and poach them in chicken broth. Takes only 10 to 15 minutes to cook them through in simmering broth. Then you can cut them in strips, or shred, and put in your freezer, after cooling. 

 

Shredded chicken breasts are yummy tossed with some salsa to make a taco salad. Or toss them with barbecue sauce for chicken barbecue sandwiches. Cut strips can be added to stir fry veggies for dinner!

My favorite dish is Chicken rice and broccoli! First you cut the chicken into bite sized pieces and saute them in a large deep pan, then you can take them out and put them aside while you brown, brown rice. Then mix the broccoli rice chicken and some chicken gravy into the pan and let it cook! it is godly! if you want to make it way less healthy, instead of the gravy, use cream of mushroom soup! You will not be disappointed

Beat one egg.

Coat Breast with egg.

Coat Breast with Italian Bread Crumbs

 

Spray baking pan with oil or butter

Place 3-4 pads of butter where you will place the breast.

Place breast in the pan.

 

Cook at 375F for 40 min.

 

Simple.  Easy.  Tasty
