I don't have a grill but I do have a george forman in my apartment. My favorite thing to make in summer time is Brats! I live in Wisconsin so Brats are pretty popular around here at cook outs. Not super healthy though 😕 I've been eating mine without a bun.

I love grilled salmon with mango/strawberry salsa: Recipe

Also, grilled romaine with balsamic drizzle. I usually make it similar to this, without the cheese.

I don't know how healthy it is but I love cutting summer squash lengthwise, marinating in Soy Vay for ~5 minutes (not too long or it gets soggy) and grilling it until it has hashmarks on it - Yum.

I make a big batch of magic dust every summer. I also make BBQ sauce from the left over liquid after making spicy dr pepper pulled pork. Love the spice and I can control what's in the sauce.

I absolutely love grilled pineapple, I must eat grilled zuccini.

Also, I leave a couple eggplants on the last bits of charcoal, so it will slowly roast its way to my tummy. Smiley LOL Smiley LOL

Chicken breast, skinless, boneless, coated with olive oil and light sprinkle of salt and pepper. Grill at 350° for 11 minutes each side. Coupled with asparagus, coated with a light coating of olive oil and a pinch of grated cheese (I use a fish platter made for grilling fish), about 8 minutes.
Then some long grain brown rice.
If you always do what you have always done, you will always get what you always got.

I love grilled vegetables. My favorites are green onions, eggplant, yellow squash and bell peppers. A little oil, salt and pepper and that's it. I often smear some soft goat cheese on the eggplant and squash after cooking.

My current favorite grilled meat recipe is Smoky Cocoa Flank Steak. I made it the first time a couple of weeks ago, and it's nirvana. The only thing I altered in the recipe was to double the amount of rub.

This 4th of July I was craving comfort food so I decided to try the "I can't believe it's not Potato Salad" recipe.  I had very low expectations as I HATE cauliflower.  It was delicious and amazing.  I adored it and am making another batch today!  Who knew?  Here is the link.   http://www.foodnetwork.com/recipes/i-cant-believe-its-not-potato-salad-recipe.html
