Ingredients:
Directions:
Heat a large pot over medium heat and add the olive oil, onion, and garlic. Cook until soft, about 5 minutes. Add the paprika, chili powder, cumin, black pepper, salt, garlic powder and onion powder. Stir and cook for 5 more minutes.
Add the chicken, red peppers, beans, chicken stock, tomatoes, and barbecue sauce, stirring to combine. Cover the pot, lower the heat to medium low, and cook for 20 minutes. Midway through simmer throw in a couple of pinches of cilantro. Remove the lid and taste, adjusting the seasoning to taste, if needed. Cover and cook another 10 minutes.
Ladle the chili into bowls and top with cheese of choice. Enjoy!
Makes 11 cups.

I added a picture of the chili so you can see what it looks like. I made it again last night. It was awesome. It also makes a great make ahead meal for lunches.
