Breaded Chicken using only meat. (very easy)

This is how you get breaded chicken using nothing but meat.

 

  • Take boneless skinless chicken thighs and defrost them in a bowl of water. (quickest way)
  • Crack two eggs and stir them up in a bowl
  • Using a food processor or whatever method suits you best, grind up a bag of pork rinds
  • Put the ground porkrinds into a bowl and add whatever seasonings you like. Pepper, Chili Powder, Parsley, Oregano, Paprika, etc...
  • Dip defrosted chicken thighs into the egg, evenly coat and then drop the thigh into the bowl of pork rinds and shake it till coated.
  • Line a pan with parchment paper, do not use aluminum foil or even a bare pan, it will stick and tear when removing it after cooking. The parchment paper will ensure no sticking occurs.
  • Cook at 475 degrees until crispy

For added flavor and no extra calories. Put the now breaded chicken into a pan on medium heat, add rice wine vinegar, tamari soy sauce and monk fruit and or stevia sweetener. This will soften the pork rind breading and give the chicken a teriyaki like flavor. Honestly, it tastes just like breading, maybe a little saltier and you're adding no wheat whatsoever.

 

Perfect recipe for those following low carb or gluten free diets. And trust me, I think pork rinds are disgusting, but in this application they are flawless.

yep.  we do a variation of the pork rind breading (parmesan cheese, paprika, garlic powder and onion powder) for chicken tenders.  i make a sriracha mayo for a dipping sauce.

That sounds like a very interesting recipe @MintyFox ! Are the rinds fresh or can they be any of the pre-packaged rinds?

they can be pre-packaged.  just make sure to check the ingredients.  the only ingredients listed should be pork skin and salt.  if there's anything else, go with a different brand.
