I think quinoa is absolutely glorious, and for breakfast or as a pudding it simply rocks!!!! My breakfast today was 125g cooked mixed colour quinoa, cooked last night and chilled overnight in the fridge. But the magic is worked while it's relaxing overnight!!!
I added a goodly slosh of vanilla extract, about 10g organic acacia honey, enough cinnamon to make me think warm thoughts and enough dried ginger to curl my toes. I chopped up about 7 dried apricots and stirred the whole lot together while the quinoa was warm. This morning the smell from my container was dreamy! I love cold 'grains' for breakfast and with a banana and yogurt chaser I didn't think of food again until 1pm - not bad for a 6.15am breakfast!!!
Dried prunes are absolutely smashing with quinoa, and I love to add fennel seeds with them to get a lovely aniseed flavour! Grated dark chocolate (85% is scrummy, and ultra decadent at breakfast!!!!) with a modest tumble of chopped hazelnuts and a few broken brazil bits!!!
Happy breakfasts - and if you take your quinoa bowl back up to bed and snuggle down for a relaxing munch the pleasures of your efforts last longer!!!!
