Cheesy Chicken Quesadilla - Pace Ready Meals

I had Cheesy Chicken Quesadilla tonight for supper, and it was so good. I want to find out how to make it on my own. I did a search for it, but the only recipes I could find were the traditional quesadillas with a soft shell. This meal looks to be chicken, rice, corn, and I'm not sure what else.

 

Would someone be able to direct me?

You have to be careful of the number of calories in a dish like this. The chicken, cheese and tortiallas are all high calorie. You would have to reduce your serving size to make up for it. This may result in the dish not being filling enough. The meal would also be high in fat content.

 

I like to cook rice, corn and beans together in my rice cooker. I use 115 grams of each. The rice is weighed before cooking. If you don't have a scale, use a serving of each per person.  For a Mexican flavor, I use Kruner's black beans with jalepenos. If you use  plain black beans, I suggest adding some cumin for the Mexican flavor. 

 

I put the rice on the bottom with the normal amount of water. Then the black beans and corn. The corn gets steamed because it's above the water level.  For my rice cooker, I set the timer for 26 minutes. If you don't have a rice cooker, just do it in a pot on the stove. Try medium low for the first attempt.



A serving this size (huge) is about 600 calories.

Add chicken, cheese, and a tortilla, and you are looking at over 1,000 calories. This means you might be able to eat about 1/3 of the quesadilla. 

 

If you wanted to dress this plate up, you can add greens cut finely and diced tomatoes. For seasoning, you can add a little cilantro to the rice or veges. 

 

Sometimes, I'll make a burrito on a Stacy's Organic Wheat tortilla. (The tortillas aren't expensive.) The lowest fat chips I've found are La Favorita. With a family, you could have a serving bowl with each ingredient and have people select their own. Or maybe have the kids play Chipotle's and serve you.
