Does anyone have any simple healthy crock-pot recipes to share? I just got one but I'm not super kitchen savvy.....

Try this super easy taco soup. Brown the meat (I use venison or turkey burger) in a pan first, then transfer it plus all the other ingedients to a crock pot. You also can include onions, garlic, etc. I sprinkled a little quick cook barley in mine to thicken it up a bit. Hard to go wrong.
In an hour you will thank me. 🙂

I do a whole chicken with a can of cream of mushroom or cream of chicken on low for 8 hours.
or pork chops with a can of cream of brocoli

Don't know where in the world you are, but it's winter here and I've got pot roast on my mind. Here is the recipe:
Pot Roast
3 lb. beef roast
2 onions, rough chop
1 garlic clove, minced
1/4 cup soy sauce
1 cup coffee
2 bay leaves
4 carrots, sliced
4 potatoes, cut up
salt and pepper to taste
cornstarch (optional)
Heat oil in a pan over medium-high heat on stove. Salt and pepper meat generously and brown on all sides. Place in slow cooker with onions, garlic, soy sauce, coffee and bay leaves. Cook on low for 8 hours, adding carrots and potatoes in 1 hour before the end.
(Optional) When meat is done, remove it and vegetables to platter and pour liquid into pot over medium heat and simmer. Add cornstarch slurry (1 Tbsp. cornstarch with cold water, mixed well), to drippings and stir until thickened. (Will thicken more upon cooling.) Drizzle this sauce over sliced pot roast and vegetables.

I'd say I use my crock about as smae amount of the time in the summer as in the cooler weather. I use it more for the things that I don't want to put in an oven to heat up the house, but I use it less because I can grill more things (without shovelling to get to the outdoor grill).

I really enjoy boneless ribs in the crockpot and the recipe is very simple:
Season the ribs the night before with your favorite seasonings
Roughly chop a large onion and place half of the amount in the crock pot
Smash as many cloves of garlic as you like place half in the pot
Lay ribs on top of onions and garlic
Cover the ribs with the remainder of the onions and garlic
Add water to cover the bottom but not the onion/garlic mixture
Turn the crock pot on low for 6 to seven hours
Once the ribs are done depending the ribs and your pot add your favorite BBQ sauce
When the sauce is warm/hot enough serve the ribs or pull apart with two forks and now you have Pulled Pork. This is great with sliders if you eat bread.
