Hello everyone!
I wanted to know some suggestions for good meals that taste good microwaved. Soups are good, I hear, but I live in the Caribbean so it's generally too hot to eat soups regularly. I love mac and cheese (which I make from scratch to make it healthier and add as many veggies as possible, including spinach, onions, peppers, tomatoes, etc) and it tastes awesome reheated. Lasagna I don't like as much reheated. I've also made a vegetarian "chili" that's good reheated.
What do you guys love, even reheated? I'd take non-vegetarian options too, as many recipes you can substitute meat with something else.

I would expect slow cooked meals to taste good re-heated. Anything from stews to curries of which the taste only improves with time.

I really like soups with lentils. I use this site a lot: https://www.facebook.com/USAPulses/?ref=br_rs I like soups, stews, chilies for lunch and they have a lot of options.

I admit I often bring frozen meals to work--Amy's has some pretty good meals and is entirely vegetarian. You could put a pita or wrap, some hummus, and some veggies in a bag and make a sandwich at work when it's lunchtime. I sometimes have leftover tofu and will bring that with frozen corn to heat up at lunch. Not the most nutritious, but it's quick and easy.

veggie stir fry doesn't taste bad when microwaved. I would use sturdy veggies like peppers, zucchini, red cabbage- you can even add a little egg whites in it for added protein and a more satisfying meal.

Tofu or tempeh is also good in a stir fry. Tempeh, an Indonesian food made of fermented soy, is fairly sturdy. It's got a nutty, chewy texture.
