Wow, I don't feel as bad after reading this. I have been recently diagnosed with Hashimoto's hypothyroidism and have been gluten free for 5 weeks and so far are still eating any fruit or vegetable (including nightshade vegetables) corn, dairy, and rice. But have been advised that I may have to eliminate the latter as well. I am allergic to egg, wheat and crab. Recently tested and have gliadin IGA & transglutaminase IGG antibodies but negative for endomysial IGA.
This isn't low calorie but there are great nutrients in avocado's and coconut (I would try coconut milk and virgin coconut oil.) I even add MCT oil (form of coconut oil) to my morning tea and it gives me energy and focus.
My go to snacks right now is apple slices, reduced fat cheese sticks, lowfat cottage cheese, popcorn, carrots with hummus, celery sticks, greek yogurt, pistachio's, walnuts or almonds. I add flax seed, chia seeds and hemp seed to salads, yogurts or side dishes when I can.
Not sure what fruit & vegetables you have to avoid. Can you have wheat grass, spirulina or other fruit or veggie that could be mixed in a smoothie or shake?
You can make some protein bars on your own with cacao. Here is a good recipe - but you could substitute something or omit the almonds. http://www.robinskey.com/chocolate-bar-recipe/

I have a feeling that a lot of my allergies are to pesticides or chemicals used on the produce, so I will be trying to eat organic before completely ruling out ever eating any of these again. These were the only produce foods I had tested.

This article talks about eliminating them but once your gut is healed - try incorporating them back into your life... in their purest form, etc.

My mom had a feeling when I was 6 that allergies to fruit skins are caused by pesticides.
My allergist has told me that this is 100% true!!

I feel your pain. I am allergic to gluten, tomatoes, melon, avocado, citrus, strawberries, bananas, pineapple, bell peppers and sometimes pears, peaches, and plums bother me. I am also trying to be vegan.
I end up eating a lot of food that is really not the best for me, or super over cooking some of those items so they don't bother me as bad.
I eat a lot of gluten free pasta, potatoes, mushrooms, broccoli, cauliflower, carrots, rice, and corn.
Try making it interesting by using different spices. I like to use indian, mexican, and asian flavors.
Just make sure you take a multi vitamin if you aren't eating the best
