Gluten-Free Birthday cake ? Suggestions?

I am in need of a recipe for a chocolate birthday cake. This is my first birthday that I have been Gluten-Free for and of course I have to have some cake  lol. I will be making my own birthday cake since it is almost impossible to order a Gluten-Free Chocolate cake around/near where I live. It also does not have to be cake, it could be something else that would be as equally delicious and healthy . I would really appreciate the feed back and ideas.

Well, first of all, happy birthday! If you can have dairy (butter and milk), you should be able to just use a gluten-free flour substitute for your recipe. I created a DIY flour blend that I use. You can find it here:

Lately, (instead of 3 c brown rice and 1 cup millet), I have been using 2 c brown rice and 2 c white rice flours along with 1 c each of the potato and tapioca starches. For a cake with 2 cups of flour, add 3/4 teaspoon xanthan gum or 1 1/4 teaspoon guar gum. Hope this helps!

I'm lucky enough to have quite a collection of cookbooks. 

 

One of of them is full of gluten free recipes by Hugh Fearnley-Whittingstall. I know there's one for a kidney bean chocolate cake that is absolutely amazing. When I'm home from work tomorrow night I'll dig it out and post it here.

Happy birthday! I have a different approach. This year my birthday came right after I'd started making a big effort to improve my fitness. Cake is sort of a trigger/binge food for me so I was conflicted about celebrating with it. So instead, I treated myself to a small glass of amazing liqueur that I would normally never drink because it's $15 a shot. It tasted incredible and felt really special, the way birthday cake should. 

 

So basically, a special glass of wine, liquor, sherry, whiskey, etc. that you can truly savor and enjoy can fill the same function as cake. If you're into that sort of thing.

It's metric all the way for me @Dominique!

 

Here in the UK, we're a bit muddled about metric v imperial measurements. 

 

We seem to use both concurrently!
