Gluten Free / Zoned recipes

Hey All! I've had several people message me for GF and/or Zoned recipes but the message length is too short to reply, and if anyone is looking for GF recipes I'd like to share them with everyone Cat Happy I'll post more as I have the time!

 

Note: Unless otherwise noted, the Zoned recipes are for a 3-block meal or 1-block snack.

 

1-block snacks:

String cheese and palm-full of nuts (i.e. 12 almonds, 4 pecans), 1 block snack

1/2 c. applesauce, cheese stick, 1 block snack

 

3-block meals:

Lean1 shakes (3 zone blocks, almost all flavors are GF)

Zone bars (limited ingredient version)

 

Balsamic Salmon with "sauteed" zucchini.

To "sautee" zucchini, slice into 1/2" slices and cut slices into quarters. Place densely into warm skillet with no oil/cooking spray, and sprinkle with your favorite seasoning 🙂 I personally use a very small amount of a creole/cajun seasoning or a bit of pepper and rosemary. Turn pieces before they brown and remove from heat when tender-crisp.

 

Garlic Steak with 2-3 small red potatoes

(To make the steak zoned, don't do the avocado and take the olive oil down to 2-3 tsp)

 

"Fried" shrimp or chicken 

-Take thawed meat and dip into egg white wash (1 egg white and ~2 tbsp water), then coat with mixture of 1/2 c. rice flour (or whichever flour you prefer), dash black pepper, and 1/4 tsp cayenne pepper. Spray baking sheet with non-stick oil spray and arrange onto sheet. Spray tops with oil. Bake at 350F for about 8 minutes and stir/flip. Cook another ~5 minutes or until chicken is no longer pink and/or shrimp is no longer translucent.
