Hello all!
I've been making sprouted bread sandwiches with spinach and protein (applegate turkey, grilled chicken, etc) to get some spinach in my diet. I'd like to try a salad but I'm not sure what type of dressing I could buy would go well with the spinach AND be relatively healthy. I usually do the "fork trick" where I dip my fork in the dressing and then eat the salad so I don't mind if the recommendations are kind of high in calories. I'm pretty picky with dressings but I usually like casear (creamy or vinagrette), some ranches (but every "organic" one I've tried thusfar I've disliked!), and sesame ginger.
Any and all suggestions are welcome! Thanks everyone! 🙂

I like your approach. I'm kind of a salad purist and don't see the point of dressing tasty greens and salads with anything besides a drizzle of olive oil and some vinegar or perhaps lemon juice, and a little salt and pepper.

Carrot Ginger Dressing
great on salad, as a dip for veggies or meats....I LOVE it & usually make a quadruple batch. It will stay good in the fridge for a week. I'll include the recipe that I have & the changes I made, as well.
1 c carrot, coarsly chopped
1 T onion, finely chopped (I like to use a shallot, but can use any kind)
3/4" piece of ginger, peeled & sliced (I like a lot of ginger and double the amount)
1/4c rice vinegar
2T vegetable or canola oil (I use peanut Oil)
1T sugar (I use 1 1/2t)
2t white miso paste (I use 4t)
1/2t sesame oil (I use peanut oil)
salt & pepper to taste (with the extra miso, I just use pepper)
Put all ingredients in a food processor (I'm sure you could also use a strong blender)
Puree until everything is smooth
Can add a little water, if wanted lighter/thinner
Store in the refrigerator for up to a week

@jencanteven a good way to start with kale is to find one of the baby kale/spinach blends at the market - very good!
Another greens blend I have been enjoying a lot is Earthbound Farms Organics Zen blend. It has baby Asian greens in it and it has a little bit of a kick - a nice change of pace.

@RobsDaughter wow thank you for that dressing! I have everything at home to make it in my Vitamix, it will go great with my Zen greens!

I would go with something simple...
just squueze some juice from a whole lemon
add a pinch of pink himalayan sea salt
and a pinch of freshly ground pepper
and if you want....add a little drizzle of olive oil (not too much)

I'm a spinach addict and need a 12-step program to wean me from eating it everyday, but my doctor thinks it's a great thing to be hooked on. I like to experiment and find other spinach salad recipes. Lately, the best one I served at a dinner party was a big hit. It included small cubes of smoked Gouda cheese, sliced grape tomatoes, and lots of roasted thinly sliced shallot rings lightly tossed with a vinaigrette of olive oil, red wine vinegar and a nice Dijon mustard.
