Healthy Lunch Food!

Hi My name is Antoinette and i work in an office and would really like to get into cooking more and eating healthier lunches. im 24 and would like to loose a couple pounds before my best friends wedding in May. if you have any healthy lunch ideas that i could try to recreate please let me know!!!

Hi @awillmeno — I’ve really grown to like salads for lunch with lots of stuff on top of the greens I use for the base.  The Nutrition Diva has a pretty good podcast on building a good nutritious and satisfying one here.

I love veggies- every color every way. I always eat a big bowl of veggies for lunch. A big cup of coffee and an 80 calorie Noni Biscotti. But you are not limited to just that. The tortilla factory makes 60 calorie wraps that come in all different flavors. They are amazing- low carb too. You can make a chicken wrap or veggie or egg white- the possibilities are endless. If I am pressed for time I will take pretzels, a fruit and cottage cheese. It takes a longer time to eat so I feel like I am having a full meal.

I’m really fond of chia seed pudding with coconut milk and slices of banana and blueberries. That’s probably more like a snack but could add it to your lunch. The fat content makes it more filling.

 

This is the recipe I used:

 

Yields: 1 serving

Ingredients:
3 tablespoons white or black chia seeds
3/4 cup unsweetened coconut milk or almond milk
1 teaspoon vanilla
1 sprinkle ground cinnamon
2 teaspoons honey (optional)
3/4 cup low-sugar colorful fruit, such as raspberries, blueberries, kiwi, or kumquat

Directions:
In a cereal bowl, stir together chia seeds, milk, vanilla, cinnamon, and honey. Let sit for 15 minutes or refrigerate overnight, and chia seeds will expand, soften, and absorb the liquid. Layer chia tapioca in a tall glass with fruit.

Most days I would go a Salad, but freshen it up a little. Add some baby kale or spinach to your leafy base, cucumber, grated carrot, tomatoes, red and or yellow peppers, and for an extra boost some avocado. I will sometimes put a little onion in, but onion/ garlic, can leave you feeling a little hungry a little while after eating. Some shaved coconut can also add some punch to the flavor. If I have had a super light breakfast (fruit etc) I may even add some slices of hard boiled egg to my salad for lunch, or even dinner. Generally make my own dressing out of olive oil, lemon , salt, pepper, and seasonal mix of herbs, but only ever have a teaspoon, so any will do really.
