In winter, I like to eat home-made soup. Here are the ingredients I used a few days ago:
1 leek (250g, €0.52), 1 rutabaga (370g, €0.96), 1 parsnip (320g, €1.60), 1 piece of celeriac (175g, €1.13), 4 carrots (440g, €0.97), 5 potatoes (565g, $0.40). Weights are net (after peeling). Total cost: €5.58.
Prep is dead-easy: wash, peel, dice and cook in water with a bit of coarse salt:
I filter most of the water and then mix everything:
I obtain soup concentrate that I split in smaller plastic containers that I keep in my freezer:
Once diluted in water and warmed up, each container gives me two large servings. Each serving (from 177g of concentrate) only costs €0.46 (keep in mind I live in a country with a high cost of living, it’s probably possible to find the same ingredients cheaper in many other countries). Calories are 58 per 100g, so one serving is only 103 calories.
Every batch is slightly different, depending on what I can find when shopping for grocery.
