Fitbit is aware of this problem and working on a resolution. Note that the unit of measure and nutrition information is correct in the database, it's simply displaying the wrong unit of measure on the log.
Hope this helps!

In this case, it is best to measure and log the food after cooking it. If you weigh in a dry cup of rice, it will be a huge amount to eat after being cooked, same way with meats (since they lose water when they cook), pastas (they expand) or sauces (just your portion).
As a personal recommendation, make sure you write down your meals as soon as you are about to get them; this will prevent the moment where you are holding your food log and remembering how much you ate and underestimating amounts.
I have a tiny notebook where I write down the meals and their weight, so when I'm ready to write them down, they are accurate.
Get a food scale and measure everything. Increase your water intake and find different sources or variations for the meals you love that won't take a hit on your caloric budget.
Hope this helps! Let me know if you have any questions

Another thing that I can't seem to figure out; I log everything as Grams, why does it show like this in cups and other stuff when I've selected grams:
