I just started going to the gym yesterday. My plan is to go every night on my way home from work. But it just occurred to me that meals will require more planning in advance.
So, I have thawed boneless skinless chicken breasts, a well stocked pantry, not much time and no plan.
What would you make for dinner for a family of three?

Baked chicken with black beans and rice? If your family likes salsa, you can pour a jar of salsa around the chicken in the baking dish. Cover w foil so the chicken does not burn on top AND the foil will keep it moist. While the chicken is baking, make your rice and black beans. Let us know what you go with as I too have family of 3.

The other day for dinner I made Chicken in foil. You slice raw potatoes (I used sweet potatoes) put those on a peice of foil. Stick a peice of chicken on top, season it, an top that with onions and peppers. Make sure the foil is sealed all around and cook at 375 for 30 minutes and BOOM! Dinner is done!

I ended up making Crispy Cheddar Chicken... it was so easy, so good and looked beautiful too! Dip chicken breasts in milk, then shredded cheddar, then crushed ritz type crackers. It was moist and so delicious. I served it with pasta, carrots and cranberry sauce.
And so that I didn't have the same problem tonight... I put more chicken into a ziplock bag with spicy brown mustard, honey and apple cider vinegar. I'll either bake or grill that, and serve it with rice and beans & greens... I also had a bunch of kale that I cut up last night to use tonight.
I have to get on the ball if we're going to eat dinner before 8pm! And planning dinners a week at time will help avoid poor choices. Although I do always have healthy soups and salad stuff in the house.

I just tried kale, again. The first time (years ago) I hated it, but now I think its amazing!

I would suggest investing in a crock pot. There a so many quick, easy and healthy recipes out there. I use my crock pot a lot when I have to work strange hours. Nothing beats coming home to a fully cooked meal when you've been busy all day.
