Hello Everyone,
I found this awesome salad in COSTCO a few weeks ago, and it is so good that I can't seem to stop eating it. I decided I wanted to make it myself. Never thought I could have such an appreciation for Kale and Brussels Sprouts. Any who....after falling in love with this salad, I decided to give it a go at making it myself and then I came across a copycat recipe for it...Hope you enjoy... I opted to use a vinaigrette instead of the Poppy Seed Dressing, but both were really good. I even tried it with just lemon juice and sea salt and pepper.
Sweet Kale Vegetable Salad Yield: 8 servings
Salad Ingredients:
4 cups shredded and chopped curly kale
2 cups thinly sliced Brussels sprouts
1 cup broccoli matchsticks
1/2 cup dried cranberries
1/4 cup roasted and salted pepitas (the inside kernel of the pumpkin seed)
optional: chopped cabbage and/or chopped endive
Dressing Ingredients:
1/4 cup mayonnaise
1 1/2 tablespoons milk
1 1/2 tablespoons white balsamic, champagne, or white wine vinegar
1 tablespoon sugar or honey
2 teaspoons poppy seeds pinch of kosher salt Combine all the salad ingredients in a large bowl. Whisk together the dressing ingredients.
Pour the dressing over the salad and toss well to thoroughly coat. Let the salad rest for at least 5-10 minutes before serving. Enjoy!

Hi, the salad sounds yummy. I did some shopping today, with interest in adding seeds and nuts to etc berries, which are very high in calories and carbohydrates even in small quantities, 1/4 cup, making a healthy salad into a high carb high fat high calorie item. For those struggling wih weight; or perhaps a chronic disase which requires, attention to these items to maintain health and weight salad may not be the best choice.

It seems like a weird combination but you’ll be amazed. Start with crisp watermelon pieces. Add a couple of slices of cooked bacon crumbled up into small pieces. Sprinkle a little feta and fresh mint over the top, and it’s done! This summer salad is refreshing, flavorful and beautiful to look at. Bring it to your next gathering and friends will be begging for the recipe.
1 small watermelon
¾ cup Feta cheese (brick, not the already-crumbled variety)
1½ pieces of center cut bacon
¾ cup fresh mint leaves (or 5 chives, your choice)
