Lent food ideas

Lent is coming up here in a few weeks, so I need to come up with non-meat ideas for foods. I don't care for seafood, except for shrimp. However, I know I can't always eat that because I think it can be high in calories. Before, I would eat bean and cheese burritoes, whether homemade or I'd eat the burritoes from the Tina line. I do know that those burritoes are high in calories.

 

I just need ideas of what I could eat that have no beef, turkey or chicken...maybe even something I could carry on past the Easter season.

Shrimp is actually a pretty low calorie option.  Most recipes pair it with a ton of butter/oil or serves it on a big bed of pasta.  Even this recipe:

If you cut back the oil to 1Tb you end up with a recipe that's roughly 250 calories.  Serve over a small amount of rice or pasta and it will still be a lower calorie meal (depending on what calorie level you're looking for). 

 

Here's a full meal with shrimp for under 300 calories.  You could even add a few more shrimp and not push the calories up too high:

As for recipes for lent, I'm assuming any kind of vegetarian meal would do.   Just watch as sometimes large amounts of oils/fats in vegetarian meals can push up the calorie count.  You would have to work out the calories, but http://ohsheglows.com generally has some appealing looking vegan recipes and she's not heavy on the oil for dishes.  I'm not a squash person, but her first recipe on this page:  http://ohsheglows.com/categories/recipes-2/food-entrees/ looks appealing.

Completely meat free, filling and healthy. I make this quite often and toss in whatever vegetables I have laying around. I also usually cut back on the amount of soy sauce.

Some of our favorites during Lent: veggie stir-fry with homemade teriyaki sauce and brown rice, tomato, basil and mozzerella sandwiches, veggie chili, and other meatless soups.
