Since we embarked on our plant-based journey a year ago, we started to incorporate more and more veggies to our meals.
My GF is not the kind of person who likes to just throw stuff together and make a regular salad, I prefer to eat my veggies the same way I would have done with meat (or dairy). The first meal Delphine ever made for me was rice paper rolls with chicken (and a bit of veggies...). She didn’t know much about nutrition and how something as simple as rice paper could make my glucose spike (for those who don’t know, I have diabetes Type 1). We started to recreate that recipe last week when we ordered a box of veggies from @antidote_bouffe_vegane .
The big salad leafs got her thinking; “Hey, I’m sure we can roll some veggies in it”. So, we did. It was a success so we did it again yesterday after ordering another box from @antidote_bouffe_vegane (Btw, you get a HUGE box of delicious and great quality vegetables for 33$+txs not sponsored, we just like to support local businesses 💕). It’s an easy, quick meal that doesn’t require a lot of preparation.
All you need is a big lettuce to wrap your veggies, and add whatever you have in your fridge! We like to add a spicy peanut sauce for extra yummy-ness (as you can see on the side).
Even better? Add some 🥭!

I really like using lettuce leaves in place of bread for sandwiches and tortillas for tacos. It works pretty well and saves a lot of calories and increases my consumption of veggies.

I made Asian lettuce wraps a couple of weeks ago. We have so much lettuce growing in our garden and I was tired of salads. I did have trouble rolling the wraps and keeping the contents in. I used ground turkey, carrots, scallions, and water chestnuts as the filling. It was delicious but it ended up just eating it with a fork insted of fingers.
