I am a nurse and just had a patient that is going to be 73 and she lost 39lbs since December - I figured wow if she can do it so can I. She said low carb - any ideas of meals?

Those meal options look great @jabber_wockey! with the speed of today's life i'm always looking for options that are not so time consuming and delicious of course. Smiley Happy

I just made the best LC Mexican meal last night! I stuffed poblano peppers with cheese and ground beef sauteed with taco seasoning. Baked for 20 minutes at 400, topped with avacado and sour cream (and hot sauce of course!) Totally satisfied my Mexican food cravings! Yum.

I did something similar last night.  Sauteed Poblano peppers, mushrooms, and onions.  Mixed with salsa, sour cream and cheese. Mixed all that together and put it on top of a baked chicken breast and baked for another half hour.  I served with cauliflower rice for me/husband and regular rice for the kids.  I never thought of topping with avocado.  Maybe next time.  It was a big hit with the kids.

I too am doing low carb, but not Atkins style, I have healthy fat like olive oil, and lean protein with green veggies.  I do not eat any grains, or starchy veggies( no pasta, white potatoes, rice, bread, etc) 

I cook cauliflower until soft in a skillet, then break it down with a wooden spoon as I cook off all of the water, I add pepper and a little garlic or cheese.

i make the Cloud bread out of eggs  once in a while and use it if I want a 'sandwich', I also use lettuce  leaves as wraps.

I use Shirataki as a replacement for pasta.

yellow turnips are a great sub for white potatoes, I make 'scalloped potatoes' with them, use them in pot roasts or mash and eat like potatoes

There’s a great book called The Big Fat Surprise: Why Butter, Meat, and Cheese belong in a healthy diet. Details the research. Saturated fat is not bad for you. The research is pretty clear once you see all of it in one place. (Take away: you don’t have to deny yourself!)

Hey eandersen!  I am a nurse as well and I typically follow a "low carb" diet.  Meaning I restrict ALL of my sugar intake to <50grams a day.  I do blog mine on myfitness pal to make sure I'm getting enough protein and healthy fats.  I eat lots of eggs (scrambled, hard boiled etc), lean meat (chicken, lean beef, turkey, fish) and veggies.  I stay away from the veggies with a heavy dose of carbs like potatoes or even sweet potatoes.  I only do those occasionally.  I eat nuts and high protein dairy as a snack and if I am going to have fruit or bread (the 45 calorie kind) then I do it by lunch time.  That way I can work it off in the gym.  Definitely avoid carb heavy meals at dinner and before bed.  I ONLY drink water and sometimes coffee with a tad bit of cream.  It's a lifestyle for me.  I have made adjustments to how much I take in and I firmly believe it isn't the quantity of calories we consume, it's the quality.  If you focus on healthy, whole foods from nature you'll be set.
