So I've been reading a bit about low glycemic eating. I was wondering if any of you had experiences with that sort of eating; and if you had, what your take on it was and if you found it helpful.

I did the South Beach Diet for a while. It focuses on low glycymic meals. I found it to be a very inuitive and easy meal plan to stick with. You'd always feel full and satisfied.
I'm no longer on the diet, but I find myself following the basic principles even still.

Hey @AimeeMarie! I found some pages that may be helpful, like Low GI Meals (which has a book) and All Recipes which has many user contributions. As always, please consult your doctor before getting started on a meal plan

I do this constantly! I feel so much healthier, and it has become much easier to work out. I have an office job so it makes working out difficult sometimes, but even at an active lifestyle, you can't outrun your fork. I have found that it's incredibly helpful in getting your body back to doing what it should. I do the Zone diet, which is a bit intense for some, but a cake walk to others; it just depends on your preferences. Keeping with a diet like that has helped me eat in a more healthy fashion, and eat more natural things. It's actually a bit difficult to eat unnatural stuff on a diet like that. I cannot have wheat products, and rather than go find rice flour for every meal, it's so much better to just grab some broccoli. Not only is it healthier, it's often cheaper!

I found that I am very successful when I eat lower on the glycemic scale - and I feel great doing it. I was very "hard core" for a period and was eating 25-30 grams of carbs per day. This was pretty tough to maintain for a long period of time, and going that hard core occasionally came with a headache in the morning.
I have backed off a little now, and allow myself a couple of small servings of carbs each day. For example yesterday my high carb items were an english muffin, half cup of roasted potatoes and some prunes.

If you are a pasta fanatic (I am), you can reduce your carb intake by substituting julienned or spiralized zuchinni squash. I personally don't like the sweetness of spaghetti squash so found the zuchinni noodles were a great substitute.
Good luck!
