I need some good suggestions for lunch! We aren't able to shop more than once a week and I find after a day or so of lunch meat, I just don't like it. It has to be really fresh. A microwave is not always available and generally we use a cooler bag to keep foods.
What suggestions do you have for us to start the NEW YEAR off right with lunches for work?

Home cooked meat (chicken, pork tenderloin, etc.) will keep longer than lunch meat. You can cook some up on Sunday night for the rest of the week - or cook more on Wed night. I'm not a huge fan of cold meats / salads, but a lot of people are. I wouldn't put the meat into them, but consider mason jar salads. You might be pushing it to make a week's worth at once, but as long as everything is super fresh I've done this in the past.

This time of year I like a lot of soups. But I like to switch between salads and soups.
Im not a big sandwich eater

Buy a rotisserie chicken at the grocery store and split it into individual portions to eat at lunch. The nice thing about that is that rotisserie chicken tastes great cold, or you can chop up the meat and make chicken salad for sandwiches or wraps. Rotisserie chickens are insanely cheap and you can use it multiple ways.
