Hi everyone!
Meal prep newbie here! 🙂
Lately, I've been doing rice, some type of legume, and veggies. They're ingredients that are usually pretty affordable and will last me a while. But it is getting a bit boring.
If you meal prep your lunches and have some simple recommendations I would love to hear them! 🙂

I guess it depends what you like to eat. I usually have a salad and tuna or steamed veggies for lunch. you can make a sweet potato mash - fall is coming so that would be perfect with some warm spices. you can do grilled chicken or veggie wrap. It doesn't have to be the same thing everyday, just do it the night before so you have time to prep and not feel stressed in the morning.

I have sworn in to making salads everyday. I usually buy a salad mix at the store and then assemble it at work. There are so many to choose between lunch is never boring. I also bring a fruit (seasonal) and sometimes yogurt (Greek) and or a kind bar. I am full all day. I drink water with Nuun tablets.

We usually consume our vegetables raw. Give it a try its a great way to cut calories but still feel full at lunch. My wife and I purchased a spiralizer. You can find them at your local supermarket.
Here is what we had last week
Zucchini Noodles Raw
Carrot Noodles Raw
Beet Noodles Raw
Diced Tomato & Onion
Sauteed Shrimp (season how you prefer)
Its a quick 15 minute Meal that will last the entire week (assuming you purchase plenty of these vegetables).

Tuna and veggies is definitely a great option for lunch. I recently introduced sweet potato as well, and it's been great so far.
I've always struggled to eat salad, but veggies are not a problem at all, especially carrots and broccoli! 😀

I usually oven roast mushrooms, broccoli, and onions together with a sprinkle of garlic salt an olive oil. Tastes great. If you have a slow cooker, any type of seasoned chicken recipe works well too. I usually make shredded chicken that's been seasoned with various spices or taco seasoning. Tastes great!
