I make a whole wheat pizza crust that might be a fun dinner I love to top it with some sautéed veggies and if you make a thinner crust and don’t load it up with too much cheese it can be reasonably healthy and definitely kid friendly.

I also make a sweet potato and black bean combo that I use a few different ways either in a tortilla as tacos or a burrito, over rice, on top of nachos or in an egg roll wrapper. It’s simply a large sweet potato chopped into bite sized pieces and then tossed in oil and some seasoning (Cumin, red pepper, oregano, lemon pepper and a little salt) and roasted in the oven. Then I cook up some onion, bell peppers and garlic in a large frying pan. Once those are done I toss in a can of black beans to heat through and get some of the veggie flavor and then mix in the sweet potatoes when they are done roasting. I don’t know if that’s something your family would like but the basic idea is fairly versatile you could do something similar by replacing the roasted sweet potatoes with some cooked and chopped up chicken and then use it as an eggroll filling and then make it again the next week changing the seasonings up a bit maybe adding some different peppers to make it spicier and serving it over rice this time that way your mixing up your meal a bit each time.
