I am not to eat meat, fish, eggs, poultry, cheese, carrots, potatoes, radishes, or anything that grows underground.
I have to watch my saturated fat intake and I am trying to go gluten-free.
I am also trying to remove corn products,bananas and grapefruit from my diet, but I do need potassium.

Take a look at the Happy Herbivore cookbooks. She's vegan, no oil and many of her recipes are gluten free and she notes it if she uses a common allergen. I lost 15 pounds in a couple of months (without my fitbit and without increasing my activity at all) by following her recipes. And the portion sizes are large, and most of her stuff is delicious. I have all her books and I've been very happy with them. She does use root vegetables in many recipes, but you could always swap them out for something else or omit them entirely.

Thats a pretty broad range of ingredients eliminated. Sounds like you should consult a dietician to make sure your diet ends up giving you all the nutrients you need.

It is because I am diabetic and my diet is related to Jainism, but I do eat honey and I drink milk, and I use butter.

I have seen more than one dietician on it, and they said it was possible.

I'm sure its possible, it will just take some planning to ensure you are getting a balance of protein, carbs, etc. Good luck!

Spaghetti squash gives you a heathy option for pasta.
Look at the blog called noglutennoproblem. They have great gluten free recipes and alternatives for making your own flours that don't include corn or potato products.
For Eggs, look into the Egg Replacer for baking items. This has worked very well for me.
I had a very restrictive diet last year as my stomach healed from gluten. It is possible to eliminate the items you listed, just takes a lot of planning and research.

Plantbased eater here! Just off the top of my head, with exceptions for carrots, parsnips and potatoes mostly seem to eat above ground stuff. (hmm...wondering if hydroponically grown root veg would be allowed for you?)
Adding in some goodies like qunioa and beans will tick the gluten free boxes too. Ditch the milk and you'll pretty much eliminate saturated fats with exception to what you add in or cook with.

Have intended to start posting up fav plant-based recipes but think I've only posted 1 so far as life keeps getting in the way. Maybe give a topic and the inspriation will start the flow.....so what would like first? Breakie, Lunch or Dinner?
Alternatively, if you've a fav or list of fav's I'm sure we can veganize it for you -- and it will just as tasty if not more so than the standard. Plus you'll be likely to have on hand all the general ingredients.
With a good variety of plants, beans, grains you will have NO PROBLEM getting getting not just sufficent macros (which are mostly meaningless and separate from actual nutrition measures) but also plenty of microo and phyto nutrients.
Not sure what Jainism is or whatever, but will have to keep eye on your sources of B vits.
Why go gluten-free? Self-diagnosis? Just following trend/mis-information? Maybe have leaky-gut syndrome?

I was informed that going gluten free helps reduce inflammation of the body. So I want to use rice and not wheat. The trouble I am having with this is that I do not know how to make bread without eggs or corn products in it, using rice.
I found a source of tofu that has B12 supplemented to it. It is called TofuPlus by nasoya.
I would like to start with breakfast ideas and then go on to lunch.

Look on the website, noglutennoproblem. They have a flour mixture where they give substitutes. I have made bread without corn. Even though it had yeast, the texture was more like a quick bread. Egg replacer can be used also.
You may want to try spring roll wraps as another option.

Jainism promotes non violence to all living things. Check the dairy industry out and you will be off milk in no time. According to the studies done (see China Study etc.) the casein in milk is carcinogenic anyways. A low fat plant based diet is the way to go. All grains need to be whole grains. ABSOLUTELY NO white flour or white anything for that matter. I would ditch the milk before gluten and see how you feel. When it comes to gluten only eat organic wheat and try some of the organic sprouted grain flours like spelt.
