A New Years Tradition for me is this recipe:  http://www.theppk.com/2012/12/hoppin-john-bowl-with-red-hot-tahini/  love it and it gives me a few healthy leftovers for the New Year.  I should make it more often, but it is kind of fun to only make it for that one day, something to look forward to and share with my family and friends.

I "created" a new mix-up in my kitchen yesterday.  I love cherry/pineapple salad as a dessert & it can be made fairly low calorie while being pretty filling...  While at the store, I noted that Eagle Brand now has a caramel flavored sweetened condensed milk...  put my little brain into overdrive!  I started wondering what I could do with this in that cherry salad recipe... then everyone knows caramel apple pie is wonderful...  Here is what I came up with:

 

1 can apple pie filling (your fav)

1 lg can crushed pineapple (in juice - not syrup) - drained

1 can sweetened condensed milk (I used that caramel flavored one since it was what started this!)

1 cup chopped pecans/walnuts

1 lg container cool whip (again - free or lite)

 

Mix the first 4 ingredients well.  Add the cool whip & mix in.  Refrigerate until ready to use.  Serving size 1/2 cup =  approximately 123 calories (guestimated that one based on quantity, I didn't actually measure how many 1/2 cup servings are in a batch - I said it will serve 30, but could very well be more)
