Hi All!  Happy to find the What's Cooking? forum and plan to be very engaged!

haha!  luckily my summer 2014 new 'go-to' sandwich for lunch is:  good wholegrain bread, pepper humus, spinach, cucumber, veg-meat slices, mustard!  🙂

Hi

 

I am newly vegetarian.  I am willing to buy into the need for protein but know I easily get enough with plant foods.  And I know I feel better when my protein comes from nut butters, asparagus, or quinoa than a hunk of beef.

I like a chickpea salad -- chickpeas, either mayo or greek yogurt or veganaiise, dill, and lemon, mashed together in a sandwich or just on its own.

I switch between two different sandwiches for lunch......  

 

1. Lentil humus on whole grain with a bunch of greens, and some sliced tomato, avocado and red onions

 

2.  Guacamole, tomato, greens, and some veggie meat

 

No cucumber......ever!
