I'm kind of new to the whole "cooking all the time thing" so I look up recipes all the time. I'm a little confused when recipes call for onions, does it really matter what kind of onions I use or is it just preference? Which onion has the most nutrition (healthier)? Or do certain onions compliment certain meat/veggies?

onions are pretty much identical in terms of calories, fibre, etc. So, its down to personal taste..... I find yellow onions a bit more tangy, and white a bit sweeter. The red ones are somewhere in between.
Its worth noting that onions are one of the veggies you don't need to buy organic. They are very insect/fungi resistant, so farmers use little to no pesticide.

I am not the greatest cook in the world but I usually use whichever onion are cheapest unless it calls for something specific. The exception is red onions - those are a must for salads and roasting with vegetables for me.
