Great for summer get-together.
You need barbecue/barbecuing pit with a roasting skewer, and one wild pig (open season
all year in some parts of USA) or one barn yard raised pig (without hormones or antibiotics),
and 2 to 4 wild (or barn yard raised without antibiotics, etc.) ducks (big and fat as possible).
Stuff the ducks with bacon and coconut fat. Stuff the ducks into the pig (the ducks, and the
bacon and coconut fat, will keep the pig basted from the inside). Roast slowly (this will take
4 to 6 hours), basting liberally with duck fat. Use a meat thermometer to ensure cooking.
Invite about 12 to 24 people for this fantastic pig out party.

What is your address?? I used to do pig roasts and the aroma would drive have the block crazy for hours. I follow paleo about 70 percent of the time. I'm a chef/owner of an italian restaurant....pasta is mother's milk to me.
