Hello everyone! Ok, so I'm not used to preparing eggs like this but my hubby is becoming a fan. So, what are your thoughts about poached eggs? Do you have any recipes you can share? Has anyone tried cooking only egg whites this way?

If you have guests / want something fancier, I can suggest œufs en meurettes (poached eggs in a red wine sauce), from my native Burgundy

I have service my poached eggs over sweet potatos, mushrooms and onions as well as lentils and brown rice. I love veggies, I will put my poached egg on spinach too. If you go to pinterest and search poached egg recipes they will give you several options (just pick the healthy ones that you like).
