Protein Crackers - Recipe

Looking for a protein snack AND a cracker?

 

Just made these the other day, and I prefer them over the Seed crackers I posted in this thread: https://community.fitbit.com/t5/What-s-Cooking/High-protein-snacks/m-p/4467#M27 

 

I think these crackers resemble a wheat thin in consistency.  My seed crackers could not hold up to a dip or hummus quite like these...

 

Sunny Crackers

1 cup sunflower seeds

1/2 tsp salt ( try seasoned salt, or garlic for differerent flavor!) 

1/8 tsp baking powder

3Tbsp water 

 

Oven:350   Time: 12-15 mins. 

 

1. Grind sunflower seeds, salt and baking powder together.

2. Add the water and mix until the texture becomes a tacky dough

3. Place  1/2 the dough between two pieces of parchments paper and roll very thin. 

4. Score the dough with a pizza cutter or dough roller ( into any size or shapes you want; I did 1x1 inch)

5. Bake .  Pull out and re-score. 

6. Repeat step 3, 4 and 5 with the other half the dough. 

7. Enjoy ! 

( makes appx 75 or so crackers at 1 inch each. ) 

 

Macros: At my 1 inch pieces 

Serving Size: 16 crackers !!

  • Fat:   9g
  • Protein:6g 

 

Random Thoughts by Mom:

- Pumpkin seeds may be good to try 

- Sunflower taste is quite strong, so I recommend  adding other seasonings if you want to play around with the dough for different flavors, etc

- Perfect for dipping!  Hummus is one of my favs!
