Quick on the go baked oatmeal squares. Healthy and tasty

These squares are AMAZING!!  I eat them warm out of the oven with a little unsweetened almond milk or sometimes fat free half and half.  The leftovers I cut into squares and wrap in plastic wrap and refrigerate to grab and go. I also reheat them sometimes in the microwave for 15 seconds at work.

 

So here is the recipe:

 

1 and 1/2 c. oatmeal ( I use Quaker Oats Quick 1 minute) not instant!!!

1/2 c. brown sugar

1 tsp. cinnamon 

1 tsp. baking powder

1/8 tsp. salt

3/4 c. fat free milk or almond milk or soy milk

1/4 c. apple sauce  (keeps it really moist like a soft cookie)

1 tsp. vanilla extract

1 tbsp melted butter 

1/4 c.dried cranberries or raisins or any other dried fruit you like

1/2 c.apple peeled and sliced very thin (I have also used fresh blueberries instead of apple)

Bake in an 8x8 pan coated with cooking spray ( I use a pyrex 8x8)

350 degrees for 40 minutes.   I cut mine into 6 squares or 176 calories each

  The total calories are 1056 for the whole 8x8 so you can cut them according to however you want. Just divide the total calories by the number of pieces you want.

 

so 4 pieces (hugh) would be 264 calories. (This make a great dessert warmed up and piped with fat-free whipped cream)

6 pieces= 176 cal

8 pieces=132 cal

You get the idea!!! ENJOY
