Recipes that can be made healthy

I'm looking for Recipes that can be made healthy. Kind of like those books "Eat this - Not That"

 

Chicken and Rice Casserole

2 cans of Cream of Chicken

2 cans of Cream of Mushroom

1 Stick of butter

2 pints of home canned or store bought chicken

2 1/2 cups of white rice

 

Mix together, and bake at 375 for an hour.

It says, essentially, use low sodium broth instead of the cream soups and add vegetables.

Definitely check out CookingLight.com. I second the above rec! Their recipes are foolproof and they do a wonderful job adapting classics as well as pushing you to try new recipes.
