Show me your best Holiday recipes!

It's december the first, and (personally) the start of the holiday season! So in that spirit, I want to see what your holiday meals are like. 

 

You may have a family recipe that has been passed for the longest time; a twist on an old dish, the new recipe you just fell in love with or even, a leaner version of an all time favorite.

My all time favorite (yet not so calorie friendly) are a family tradition; Guatemalan Tamales.  Heart

I found this recipe a while back, and my family loves it and it's great for my little treat at Christmas time!

 

Light Pecan Pie

 

  • 1/2 cup honey for a mildly sweet pie OR 3/4 cup honey for a moderately sweet pie
  • 3 egg whites, whipped with a fork
  • 2 cups diced pecans
  • 4 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 3 tablespoons cornstarch or white whole wheat flour
  • 2 tablespoons either coconut or canola oil
  • 1 prepared, whole grain pie crust.

 

Mix all ingredients together in a large mixing bowl. Pour batter into an unbaked pie crust and bake for 10 minutes. Reduce heat to 350 degrees, and continue to bake for 20-25 minutes. The pie will have small cracks in the top when it’s done. Remove from oven and allow to cool overnight.

Oh wow! All sound very good and delicious. Well, my family has the tradition to eat tamales for Christmas Eve and also homemade fruit punch. It is very good and you can upgrade it with a little rum, hahahaha. Robot wink Here's the recipe:

 

Ingredients:

  • 1 box of raisins, soaked in water
  • 1/2 cup dried apricots
  • ½ cup dried prunes
  • 1/2 cup dried apples, and cubed apple pieces
  • 1 pineapple
  • 2 sticks cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon cloves
  • 1 orange peel
  • Sugar to taste
  • 10 cups water
  • ¼ cup rum (optional)
  • 1 small papaya or dried papaya (optional)

Preparation:
Chop the dried fruit, finely chop the pineapple. Put all fruit in a pot and cover with water, add spices, bring to a boil, reduce heat and simmer covered for 45 minutes. Remove from heat and add the sugar to taste (depends on ripeness of fruit). Fill cups with punch and fruit, serve with a spoon to eat fruit, add rum if desired.
