Sweet Potato Burgers-Dinner Idea!

I found these 2 recipes and decided I'll try making my own sweet potato burgers for dinner tonight! My plan is to bake these, not fry and add cheese & avocado on top! Then wrap in a lettuce....delish. I bet plain greek yogurt with cinnamon added would be good on top too, no added sodium unlike ketchup.

 

Sweet potato is a good card, oats are good and the avocado brings in a healthy fat source.

I'm vegetarian and I love sweet potatoes, so this is perfect for me. And as a bonus... SO SIMPLE without all the insane ingredients that some vegetarian dishes have, I'm a simple kind of girl! Thanks for the post! I'm excited to try these now. 🙂

They were easy and delicious. I added avocado, roasted red pepper ketchup and cheddar cheese.

I also love sweet potatoes specially when you add some powdered barbecue, olive oil and slices of onions, you get a delicious way to enjoy them. Robot wink

Roasted sweet potatoes with garlic, salt and olive oil instead of french fries are also delicious, simple and healthier!

@VivisFitbit No I have not. I will go hunt down my chicken soup recipe and make it next week with sweet potatoes. Sounds good! Thanks for the idea!
