x2 @CindyFitbit, cauliflower pizza is one of the best veggy dishes I have ever made. The only trouble I find is the processing of the cauliflower, which takes a bit of time without the correct tools.
I usually use a glutan-free tortilla as my 'crust' instead of cauliflower for a quick-easy clean up dinner. Put a thin layer of homemade sauce, some mozz, and minimal toppings. The less ingredients you put on it, the easier it will be to eat... the thin tortilla forces you to portion control. And the carbs are not much more than a cauli pizza dependent on the tortilla used.
But is it at as tasty as the cauli? nope... but tasty enough for me. If you have the time I would recommend attempting the cauli pizza first!

Courgett-i (as we call it in the UK) spaghetti made with a spiraliser tool in place of pasta in pasta dishes! Cauliflour "rice"- cauliflour processed into rice sized pieces- is another great low carb and low calorie side
I often have it with tofu (I like the viana firm flavoured ones)or some other sort of meat sub, pesto (I like sacla or zest dairy free but you could make your own) and mixed veg with plenty nutritional yeast
Satay sauce- especially if you make it with almond butter- is fairly low carb, so is korma sauce made with coconut milk, have it with tofu or tvp soya chunks or some other meat sub and veggies and the zucchini noodles, or some cauliflour rice as a side dish.

Hey @PlantBasedDiet @krisveganvixen I really love cauliflower pizza, a crunchy crust with home made sauce, mozzarella cheese, sliced grape tomatoes and fresh basil, oh my God doing it this weekend! Give it a look!

I came up with a low carb quiche, I make it on Sunday and have breakfast that I just heat and eat for the whole week. Saute up 10-16 oz of slice mushrooms until soft , line the bottom of a pie plate with the mushrooms, add egg beaters to cover and fill the plate about half way, then add steamed brocolli, spinach, or asparagus, a layer of cheese, then top with more egg beaters to almost full, I bake this at 350 for 30-45 mins until set. If you are a meat eater, saute up some diced procuitto with the mushrooms.
I also use the giant portabella caps as 'pizza crust' just pop off the stems, and use the side edge of a spoon to remove the fins, add sauce, cheese and toppings and bake, yummy.
I haven't tried the cauliflower crust but I did see raw, 'riced' cauliflower at a Price Chopper supermarket .

While shopping for artichoke hearts I found a can of 'Aritchoke Bottoms" these are wonderful little cups that you can fill and make awesome low carb appetizers, I saute spinach with garlic, stir in some creamy goat cheese, then a little parmesan, fill the cups and bake at 350 for about 20 mins, lots of possibilities with these litte babies, you get 8-10 in a can.

Making cauliflower anything without the right tools can be tough. Before I got a food processor I used to use a cheese grater. Went pretty quick it I was making small batches and relatively mess free if I did it in a big enough bowl.
I think cauliflower rice and pizza is well worth the mess and time though great way to get nutrition without suffering taste and still getting to enjoy a few of your favourite things.
