Do you like Tuna? try tuna sandwich or try with crackers or on sliced cucumbers
Salami nuggets and cheese slices with some nuts to go with it or green olives(if you like them)
String cheese rolled up in deli meat slices
3 to 4 oz of rotisserie chicken, mixed with sour cream, shredded cheese, salsa, peppers, onion and garlic(kinda like a chicken taco salad)
Hope that gives you some ideas

I’ll comment on two aspects: 1) the healthiness of your diet, 2) veggies. Any given meal isn’t in and of itself healthy or unhealthy. The healthiness of your diet is determined by the sum of everything you are eating (and drinking), over time. You will have a hard time eating a healthy diet if you are systematically excluding veggies from it, or are only eating incidental veggies (like tomatoes in pizza). All this to say you should reconsider your "hate" of veggies. You don’t have to love all of them, but there’s enough variety among them so you can find some you can tolerate. That is, if you are really interested in health.

I'd stay away from deli meats if you want to be truly healthy. Canned fish (sardines and salmon are both high in omega-3 and have lower levels of mercury). You can also make and freeze egg bites (like the ones you can get at Starbucks) to last you for a week or so. You might hate vegetables, but would you consider mixing it with eggs? Throw spinach and cheese, for example, into the egg bites before baking or steaming them.
