What are your go-to Crock Pot Meals?

I am a Crock Pot fan....  I am always looking for new meal ideas. Share with me!! Happy Eating Heart

 

My favorite:  Chicken soup

3 lbs boneless chicken thighs (i think dark meat is tastier in soup)

1 Cup Each of:

Chopped Onion

Chopped Carrot

Chopped Celery

I like to chop things in bigger bite sized pieces to make a heartier soup

Cubed butternut squash

Can of Diced Tomatoes

Handful of dried mushrooms ( i like forest mushrooms, but buttons work too-- cut bite size)

4 cloves of garlic (i smash and toss in)

2 Bay leaves

3 sprigs of Tarragon

Salt & Pepper to taste

2 cups of low sodium chicken stock

Throw in the Crock and cook on 5 hrs high OR 8 hrs low..easy and delish...

My simple quick one is cream of mushroom soup and steak tips with fresh mushrooms. 

on low 4-6 hours.  Put on top of cooked egg noodles and it's delish. 

 

But the classic roast is my ultimate. 

i make it different every time.

For a chicken dish, I combine boneless, skinless thighs with a can of enchilada sauce and crock it.  The meat is good on its own with a salad, and leftovers are great wrapped in a tortilla.  I add a little extra chili powder and cumin because we like it spicy at my house.

Pulled Pork,

We put a pork shoulder in the crock pot and shred it, takes little to no prep time and cooks all day while out running kids to various activities each night.

Kalua pork:

 

3-4 lb pork shoulder

1 Tbsp hawaiian salt (or sea salt)

1 Tbsp liquid smoke

 

combine the salt and smoke.  rub the shoulder all over with the mixture.  cook in 6qt crock pot for 8-10 hours on low.  shred it up and scarf it down.

I'm making this tonight. I like the bloggers suggestion to make a lot and keep it in the fridge through the week. When I get home from the gym tonight it will be done cooking and I will use it with tortillas for tacos. Tomorrow I will put it in my lunchbox with some vegetable sides for a healthy lunch.

Skinny Shredded Chicken
Yield: 10 servings

Serving size: 1/10 of recipe

Ingredients

  • 5 boneless chicken breasts
  • 1 - 14 oz container reduced-sodium chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • For easy storage, use Ziploc Freezer Bags

Instructions

  1. Place chicken in the bottom of slow cooker. Sprinkle chicken breasts with salt and pepper.
  2. Pour chicken broth over chicken breasts to cover.
  3. Cover with lid and cook on low heat for 6-8 hours or on high heat for 3-4 hours.
  4. Shred chicken using a fork (it should fall apart easily).
  5. To keep in freezer or refrigerator, store shredded chicken with broth in freezer bags, making sure to get as much air out as possible before sealing.

  • One 15 1/2 ounce can cannellini beans
  • 6 cups low sodium chicken broth
  • 2 onions chopped
  • 2 garlic cloves minced
  • 1 tablespoon vegetable oil
  • Two 4 ounce cans chopped green chilis
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons dried oregeno
  • 1/4 teaspoons ground cloves
  • 1/4 teaspoons ground cayenne
  • 4 cups shredded cooked chicken breast (2 large breast)
  • 3 cups grated Monterary Jack cheese
  • Salt and Pepper

In a pot combine beans, broth, half onions, and garlic and bring to boil over high heat.

 

In a meadium saute pan heat oil over medium high heat; add remaining onion and sautee until tender and almost brown. Add chilies, cumin, oregeno, cloves and cayenne and stir to combine. Scrap mixture into broth, add chicken, transfer to warm crock pot. Cook on med for 8 high for 4. Serve in bowls. Top with cheese. Also try adding sour cream and salsa on top

crock pot chicken soup (another one)

 

2 lbs chicken breasts (we use boneless/skinless thighs)

1 medium onion, diced

1/2 c diced carrot

1/2 c diced celery

1 tsp salt

1 tsp thyme

1/2 cup heavy cream (optional, but gives it a great creamy consistency)

 

put everything in 6qt crockpot and cook on low for 5-6 hours (4qt crockpot = 7-8 hrs). remove chicken, shred it and add back into pot (or, just shread it in the pot).  makes 8 servings.

My favorite crock pot recipe is chickpea curry!

2 teaspoons canola oil
1 1/2 cups chopped onion
2 garlic cloves, minced
2 (19-ounce) cans chickpeas (garbanzo beans), rinsed and drained
2 (14.5-ounce) cans no-salt-added diced tomatoes, undrained
1 (13.5-ounce) can light coconut milk
1 tablespoon curry powder
2 tablespoons chopped pickled jalapeño pepper
1 teaspoon salt
1/2 cup chopped fresh cilantro

1. Heat a large nonstick skillet over medium heat. Add oil to pan; swirl to coat. Add onion and garlic; sauté 5 minutes or until onion is tender. Place onion mixture, chickpeas, and next 5 ingredients (through salt) in a 3 1/2-quart electric slow cooker; stir well. Cover and cook on LOW for 6 to 8 hours. Stir in cilantro. Serve over rice.

I love buffalo chicken wings but they are sooooo bad for you. I made shredded buffal chicken last night and it was fabulous. We put it in tortillas with avocado and lettus much healthier than wings.

take one bottle of your favorite hot wings sauce 12 oz

put it in a sauce pan add 2 Tbl of Rance powder

mix and heat over medium heat until bubbly

then spray crock pot 

add 5 chicken breast

pour sauce over chicken

8 hours on low/ 4 hours on high

when done shred chicken with a fork 

add 2 tablespoons of butter while still hot and mix in

searve up in sandwhiches, as a dip, slidders it's great

I make this probably twice a month and it freezes easily for quick lunches. 

The nice thing is everything is frozen since I forget to defrost things often in time.

 

1 box frozen corn

1 can black beans - rinsed

3 frozen boneless chicken breasts

1 pkg of taco seasoning

1 jar of salsa

 

put everything in crockpot in the order listed above and cook on low for 8 hours. I often set this up the night before and it cooks so it's ready in the morning to pack for lunch.

I know this isn't exactly "one meal in a pot" but I love to cook chicken in my slow cooker. This way I have a protein source that will last for few nights. I usually like to use the Campbell's slow cooker packets for seasoning (and I never pay attention to which meat the packet was intended for, it's always chicken for me). 

 

I have been going heavy vegetables with steamed butternut squash, vegetable medleys and sometimes I will substitute with a more savory seasoned potato. The potato option I reserve more for the days where I am just in need of that extra comfort food. I have also done some roasted brussel sprouts but that I do not overwhelm myself with. Regardless I have these as sides for the chicken that I had slow cooked one night prior to the work week.

  • 3 lbs  whole chicken
  • olive oil
  • Lawry's Seasoned Salt, no substitutes
  • aluminum foil
Directions:
  1. Clean chicken inside and out.
  2. Spray with olive oil.
  3. Sprinkle with seasoned salt.
  4. Spray inside of crock pot with PAM.
  5. Note: Don't put any water in the crock. Roll 3 or 4 wads of foil and put them in the bottom of the crock. The chicken is going to sit on these. Put chicken in the crock on top of aluminum balls. The chicken's breast will be on the foil. Cook on high (won't come out the same on low) 4-6 hours. You have to use the foil to get the deli taste. This chicken tastes very close to the one you would buy precooked at the deli.

Easy setup stew 

Some browned meat

cut up

  1. carrots
  2. onion
  3. celery
  4. potatoe

 2 cups of tomato or vegatable juice actually add what you feel should be added

a couple squirts of worcestershire sauce

Salt Pepper

set on low and go to work.

Carrots for a side dish.

  • Carrots cook until starting to get soft
  • Put half of corrots in the crock pot
  • Sprinkle dehidraded onions and parsley on, I put a well sprinkled layer on.
  • put rest of carrots in and sprinkle more of the onions and parsley.
  • pour or sprinkle a sweetner on top
  • you may use one of the following
    Powder Sugar
    Honey
    Molases
    or just add your favorite sweetner
  • Top with several pats of butter

Cook on low 4-5 hours

I never measure and probable never use the same purportions and it allways comes out great. Well they keep haveing me make it for our holiday get togethers.

I bought some chicken thighs last week, but had forgotten that the oven is broken !  Crockpot to the rescue with a delicious/EASY "Chicken in wine sauce".  This was so tasty that we are having it again this week....

I have thin cut bone in pork chops. A little over a pound. What can I do with them for my crock pot? No mushrooms please. Need recipe help!! Thanks!!

The easiest thing is throw in meat and a jar of BBQ sauce.
