What is the single best recipe you have ever made?

Mine is from Real Simple, here it is:

 

Ingredients:

 

  • 12 ounces rigatoni
  • slices bacon
  • 6-ounce boneless, skinless chicken breasts, cut into 1-inch pieces
  • pint grape tomatoes
  • ouncesbaby spinach

Directions:

  1. Cook 12 ounces rigatoni according to the package directions. Reserve ½ cup of the cooking water; drain the pasta and return it to the pot.
  2. In a large skillet, cook the bacon over medium-high heat until crisp, 5 to 6 minutes; remove and crumble.
  3. Add the chicken to the bacon drippings in the skillet and cook over medium-heat, turning, until cooked through, 3 to 4 minutes. Add the tomatoes and cook, tossing, until beginning to soften, 1 to 2 minutes.
  4. Add the chicken mixture, spinach, bacon, and ¼ cup of the reserved pasta water to the pasta and toss to combine (add more water if pasta seems dry).

Did I mention is 141 calories per serving? Yummy! Smiley Tongue

I'm a strange one.  So far I am amazed with this new recipe and crave it instead of other snacks:

 

1 cucumber sliced into half-moons, about 1/8-1/4 inch thick

4 T Rice Vinegar

1-2 t raw brown sugar

1 T heaped of Furikake (seaweed, toasted sesame seed, sugar, salt)  *I don't use the one with bonito flakes for this*

 

Put all into a plastic container with lid and shake...serve.  I can eat the whole thing at once.

My vegetarian single-serve loaded nacho dip is probably one of my favorite things that I make. The only really restrictive thing about it, though, is that it requires a 1.75 cup casserole dish.

 


1/2 cup Gardein Beefless Ground
2 tsp Old El Paso taco seasoning (low sodium)
2 tbsp medium chunky salsa
1/8 cup four cheese Mexican blend, shredded
1/2 cup black beans
1 tbsp corn kernels
1 large leaf of iceberg lettuce, shredded
1/8 cup four cheese Mexican blend, shredded
2 tbsp low fat sour cream

 

Preheat oven to 350F. Heat the beefless ground with the oil of your choice (I prefer 1 tsp grapeseed oil), and mix in the seasoning. Transfer to casserole dish. Layer all other ingredients in order on top, except for the sour cream. Bake for 10 minutes. Top with sour cream, and enjoy!

 

(It comes out to about 376 calories.)

I have tried to re-make some tried and true favorite snacks.  I made this one for the Superbowl and every one went nuts over it.  I am doing low carb, but everyone loves pizza so I bought 8  giant portabella mushrooms. Brush off any dirt with damp towel, pop off the stems and set aside, take a teaspoon and using the side edge scrape off the fins. Saute up some turkey or chicken italian sausage with the chopped stems, garlic, onions, peppers, what ever you like.   lightly oil a cookie sheet and place prepared mushroom tops upside down,  Spoon plain tomato sauce on the "crust"  top with the sauted veggies and  top with reduced fat cheese.  Bake in a hot oven around  375-400 for 20-30 mins,  absolutely delicious, no guilt, low carb, low fat, good protein.

I have also bought the smaller ones and used them to make an assortment of appetizers, some i did as bite sized pizzas, others I filled with goat cheese and spinach,  broccoli and cheddar, salsa and cheese etc,  so many good things you can make with these babies

I made this up on my own and it is so good:

 

Quinoa

Sauted onion

Sauted garlic

Sauted jalopeona peppers

Sauted Mushrooms

Black Beans

Diced Tomatoes

 

This is so filling and yummy

Pizza dough @MsJude.. Mine! I make my own.. In a KA mixer with a dough hook.
Have 12 oz. temperate water, tsp sugar, one pk dry yeast to foam 10 mins.*

Turn mixer on low, slowly add 2 cups KA white* flour, tablespoon olive oil, tsp salt, mix a minute add another cup until blended, still should be sticky then slowly add -less than one cup ( may not need it)--4 cups max! Knead on low/med. 5 mins.

Proof in olive oiled enormous bowl for two hours covered with plastic wrap. Makes two pizzas.
* add wheat flour replacing the first cup of flour directly to the warm water yeast sit 10 minutes in mixer bowl. If you prefer a wheat crust. You may also replace sugar with honey.

I make a smoothie/juice that I got from an app in iTunes. 

 

2 medium slices of watermelon

10 ice cubes

1 cup of coconut water

ground cinamon

 

put all into a blender and blend. its yummy

I have just recently become addicted to spaghetti squash.  I don't like it microwaved but when I baked it in the oven it was great.  While it baked I sauted on the stove:  Mushroom, turkey pepperoni, onion, olives, peppers and threw a can of rotel tomatoes undrained in.  Once the squash was done I pulled out the shreds and threw in my veggies and topped with parmesean.  Delicious and I brought it to work and everyone loved it too.
