What is your favorite vegetable?

I would have to say cabbage because I like to eat it raw, boiled and baked.

I also like lots of vegetables, but my current favourite is oven baked Brussel sprouts. Just Brussels, a little oil and some garlic and bake for around half an hour. They are amazing!

I love brusell sprouts. What temperature do you bake them at @NellyG?

@alexthecat  For cooking the spaghetti squash in the Instant Pot:

What size pieces?

Do you have to add any liquid?

What settings do you use? 

How long to you cook it?

@cathm I have a mini Instant Pot, so I can only cook half a spaghetti squash at a time. With a regular Instant Pot, you can cook both halves at the same time. You still need to cut it in half though.

 

So, I cut it in half the long way and put it, cut side down, on the wire rack in the Instant Pot and add a cup of water. I cook it on high for 10 minutes and then do a natural release. I live at 7200 feet elevation and things cook slower here. At sea level, I think you would cook for 8 minutes and then do a manual release.

I go back and forth between broccoli and eggplant. When I eat out and they have broccoli, I will order it, at home when my husband orders pizza, I will order an eggplant grinder. 

 

Oh, I forgot about beets but I have to eat the yellow ones because the red ones change the color of urine and make you and your doctors think you have blood in your urine, which is not good if you have chronic urinary issues. Except I like borscht which only seems to come in red!

Brocolli is my favorite, too, @PurpleSweetTart - Other than steamed, how do you like yours? I’ve recently discovered raw broccoli with just a touch of Italian dressing. Sometimes I will add a shake of Parmesan cheese.

@SunsetRunner I am used to eating my broccoli plain, but I would definitely try it with Parmesan cheese! It has to be cooked a little beyond raw for me to swallow it but mushy broccoli is no bueno!

Yes, feel free to share it. I got this in a cooking class. Just use yellow beets, rather than red. Let me know if you can’t read my notes.

Thanks for asking @cathm😉 It might be hard to imagen but the most popular vegetable in the world is the potato. Even so, potatoes often get a bad rap because of their high carbohydrate content in the form of starch. However, in addition to being rich in carbohydrates, potatoes are an excellent source of vitamin C, potassium, and B vitamins.

 

An interesting fact >>>potatoes were the first vegetable grown in space 😁
In a partnership between NASA and the University of Wisconsin, seed potatoes were first tested in space in 1995 aboard the Space Shuttle Columbia.
